Almost everyone looks forward to this spring delicacy, and we greatly enjoy it for the few weeks that it is in season. Traditionally, asparagus is steamed or boiled, but there are many other ways to savour it. This page has links to creative (yet simple) asparagus recipes, plus a few storage and preparation tips.
For those who insist they don't like asparagus, I would suggest:
- try it roasted
- try it in a salad
These methods bring out a sweeter flavour. Also, eat it when it's fresh! Asparagus is one of those vegetables that is definitely best when fresh. Since we have an asparagus patch near the house, we always pick it immediately before cooking it - no more than 5 minutes from garden to pan! Get it as fresh as possible!
If you need to store asparagus, wrap it in a plastic bag and refrigerate it. If storing it for more than a day, re-cut the bottoms of the spears, stand them in a jar with 1-2 inches of water, and then cover the whole thing with a plastic bag and refrigerate the asparagus until needed.
To prepare asparagus for cooking, simply hold the bottom of the spear in one hand and the mid-part of the spear in the other hand. Bend the spear, and it will break at the separation between the woody and tender parts of the spear.
Rinse the asparagus and proceed with the recipe.
