It's rhubarb season! There are many ways to enjoy this Spring tonic, and several creative recipes are listed below.
The simplest rhubarb recipe: Stewed Rhubarb! Serve it over plain yogurt or ice cream, or just on its own.
A variation on stewed rhubarb: Spiced Braised Rhubarb (Saveur) ... a syrupy fruit compote from the oven.
Rhubarb goes well in pies, muffins, crisps & cobblers. Here are some ideas:
Rhubarb Upside Down Cake (Chatelaine)
Gluten-Free Strawberry Rhubarb Pie (Canadian Living)
Raspberry Rhubarb Slab Pie (Taste of Home)
Strawberry Rhubarb Hand Pies (Saveur)
Rhubarb Muffins with Almond Streusel (Saveur)
Instead of just adding ice cream as a topping for the above, what about trying Rhubarb Ice Cream?! (Taste of Home recipe)
Other frozen rhubarb treats:
Frozen Strawberry-Rhubarb Mousse (Canadian Living)
Strawberry Rhubarb Yogurt Popsicles (Saveur)
The tangy flavour of rhubarb works well in Rhubarb Curd (Chatelaine), which is much like lemon curd (only better?).
There's rhubarb jam, including variations with other fruits. And then there's Rhubarb Butter (Meghan Telpner). This looks like an amazing recipe!
Rhubarb Chutney goes well with many savoury dishes, including all types of meats and seafoods.
