If you've never tried roasted radishes - you ought to try them! They're quite mellow, and roasting brings out a sweeter flavour in the them. Small round radishes are a classic Spring vegetable, and they are also quick to cook. They go well with most other vegetables.
Set the oven temperature at 350F
Melt 2 Tbsp butter and spread it in the bottom of a 9" x 9" baking dish (or, skip the melting step, and just spread soft butter in the bottom of the dish)
Slice 2 bunches of radishes in half, and place them in the baking dish with the cut sides down.
Sprinkle salt over the radishes.
Bake for 15 - 20 minutes, depending on the size of the radishes. They are done when they are tender. Stir the radishes around after 5-10 minutes of baking time. They should be slightly browned on the bottom and starting to caramelize.
That's it! A quick and easy side dish - or, you might just eat them all straight out of the pan!
Radishes can also be grilled. Just coat them with melted butter or oil, sprinkle with salt, and grill them in a grilling basket for a tasty outdoor treat!
